This was sent to us by one of our customers. It is real good and easy to make. He used our rice flour and could not tell the difference between rice flour and wheat flour.
I used to make my roux on the stove and it took me almost an hour to get that dark chocolate color. I have changed to using a process you might want to try. You can make it in your oven using 360 degrees and you stir it every 20 minutes until it reaches the desired color. It takes me about an hour or an hour a half to do it. I like it to be a color that resembles a dark Hershey bar. There is absolutely no way to burn the roux and you don’t wear your arm out. The perfect ROUX!
