Popcorn Rice Pudding
- 3 eggs, beaten
- 2/3 cup sugar
- 1/4 teaspoon salt
- 3 cups milk, scalded
- 1/4 cup butter
- 2 cups cooked Campbell Farms rice
- 3/4 cup raisins
- 1 tsp. vanilla
- 1/8 tsp. cinnamon, 1/8 tsp. nutmeg
Beat eggs until frothy. Beat sugar and salt into eggs until creamy.
Add scalded milk. Add butter, rice, raisins, vanilla, cinnamon, and nutmeg.
Mix well. Pour into buttered casserole dish.
Place in a dish filled with 1 inch of water.
Bake at 325 degrees for 1 1/2 hours.
