Rice Cooked in the Microwave
To make 4 servings of cooked rice, use:
– 1 cup of rice
– 2 cups of water
– Salt (to your taste)
– Butter (optional, to your taste, but no more than 1 tablespoon)
– 1 teaspoon of olive oil (optional)
Combine rice, water, olive oil and butter (optional) in a microwave-safe glass bowl.
Cover with microwave-safe lid and cook on HIGH – full power for 8 minutes. The lid can be vented (have small holes).
Cook again, but set your microwave to MEDIUM (50% power) for 12 minutes. Remove from microwave. Let stand covered 5 minutes or until water is absorbed. Fluff with fork and serve.
If you want firmer rice, cook at 50% power for 10 minutes instead of 12 minutes and for softer rice cook at 50% power for 15 minutes. Also, if you feel that your rice is dried out or not cooked sufficiently, you can increase the amount of water from 2 cups to 2 ¼ cups.
Microwave ovens vary. Cooking times are approximate. Adjust cooking time as needed.
If you want to cook only 2 servings of rice use the following:
– ½ cup of rice
– 1 cup of water
– Salt, butter, olive oil
Cook on HIGH – full power for 5 minutes.
Cook again at MEDIUM (50% power) for 10-12 minutes.
Adjust times as needed.

I do not add butter or olive oil and do not open the lid anytime during cooking as your rice will be crunchy.
