Crawfish Etoufee – Our family favorite

1 lb crawfish tails

2 stick butter or margarine

1 med onion (chopped fine)

1/2 bell pepper (chopped fine)

1 c celery (chopped as desired but I like mine fine)

1 small pod garlic

1/2 -1 T flour

green onion tops, parsley(if desired), cayenne pepper, salt, Baker Farms Gourmet Pepper Sauce

Melt butter, add onions, bell pepper, garlic, and celery.  Cook until tender.  Add a cup of water and continue to cook for 15 to 20 minutes.  (More water may be added if needed)  After vegetables are very tender add 1/2 to 1 T flour (Our rice flour can be used) and more water.  Now add salt and pepper to taste. Cook another 10 minutes.  Should be like a soup.  Add crawfish, onion tops and parsley. Cook another 10 minutes.

Serve over Baker Farms Popcorn Rice.
